Delicious (and easy) No Bake Chocolate Truffles

After experimenting with these raw brownies and loving them, I was really excited about trying other raw recipes.  And as much as I loved the brownies, I love these even more!  They are simple to make and eat!  The dates give them a natural sweetness along with lots of fiber.  And we need fiber to maintain good health so it’s important to eat these!  I took them to work too and no one could believe they were healthy so we’ll call this a complete success!

No Bake Chocolate Truffles

Makes about 16 truffles

Ingredients:

1 cup walnuts

15 medjool dates, halved and pitted

1 teaspoon vanilla extract

2 tablespoons cacao powder (plus extra for coating)

unsweetened shredded coconut (optional)

Directions:

Crush walnuts in food processor until fine.  Add in cacao and combine.  Add in dates gradually (I add them 2 or 3 at a time so my Ninja doesn’t have to work so hard).  Blend until well combined (will be sticky).  Roll batter into balls and roll balls in cacao or coconut, if desired (or just eat them plain).  Refrigerate for about 30 minutes to allow them to harden.  Then enjoy your little guilt-free snack!  Sharing with others is completely optional :)
